• 4 cups of fresh or frozen peas (fresh is preferred!)
• 1/2 medium-sized white onion, chopped into fine slices
• 1/4 cup chicken or vegetable stock
• 2 tbs butter
• 4 tbs extra virgin olive oil
• salt and pepper
In a saute pan, add the olive oil, chopped onions, and sprinkle with a pinch of salt. Cook on medium to low heat until carmelized.
Add peas and stock. Cover pan and turn to medium heat. Cook covered for 5 minutes. Remove lid and simmer until all the liquid is gone. Add butter and stir until just melted and peas and onions are coated. Salt and pepper to taste.
